Healthy Propane Grilling Tips for Summer

Nothing beats a beats a spring or summer meal cooked on a propane grill…but only if it’s healthy one.
Healthy grilling mostly means avoiding HCAs (heterocyclic amines and PAHs (polycyclic aromatic hydrocarbons) – two cancer-causing chemicals form when you cook fatty meats over intense heat and flame.
5 Grilling Secrets Good For Your Waistline
You can prevent HCAs and PAHs from forming almost completely by:
- Selecting lean cuts of meat – Choosing lean beef, pork, or chicken dramatically cuts the potential for HCA and PAH formation.
- Marinating your meat and vegetables – Marinating liberally with olive oil and green herbs like basil, mint, rosemary, thyme, oregano, and sage can nearly eliminate HCA potential. Just make sure you marinate meat and poultry for at least 1-2 hours; fish and veggies only need about half that time.
- Using smaller cuts of meat – Smaller cuts (grilled on a skewer, for example) cook faster, which leaves less time for HCAs to form.
- Rotating food more often – Flipping reduces the potential for HCA formation.
- Eating more grilled fruits and vegetables – Grilled fruits and veggies are PAH- and HCA-free (and delicious and healthy, too). Asparagus, eggplant, bell peppers, zucchini, cantaloupe, and even apples are all great for grilling.
